- Cut the eggplant in half – the long way
- Use a spoon and scoop out the middle section
- Cut one finger potato, one fresh tomato and a handful of basil
- Mix the stuffing with salt and olive oil
- Stuff the stuffing in the eggplant
- Bake at 350 degrees for 20-25 mins.
