Stuffed mini eggplants


  1. Cut the eggplant in half – the long way
  2. Use a spoon and scoop out the middle section
  3. Cut one finger potato, one fresh tomato and a handful of basil
  4. Mix the stuffing with salt and olive oil
  5. Stuff the stuffing in the eggplant
  6. Bake at 350 degrees for 20-25 mins.
